Echuca College launched their student-created cookbook with recipe samples and speeches on Thursday, December 5.

The Nourish and Thrive Cookbook features 17 healthy recipes ranging from snacks, smoothies, lunches and dinners.
Most of the recipes are named after the Vocational Major students, with all entries adapted from their family favourites or created by them.
Meal ideas were created by VM students in collaboration with ERH, with their team taste-testing and photographing the assembled recipes for the book.
VM students helped to design the cookbook, and set up the launch event with freshly made smoothies, muffins, sandwiches, along with other samples and drinks.
ERH population health manager Danielle Paterson said the team liaised with students for recipe ideas and made simple healthy changes.
Ms Paterson said she was proud of what had been achieved, and highlighted other successful projects at the school as part of the Healthy Loddon Campaspe program.
Echuca College VM teacher Philly Brill said the project demonstrated how simple it was to swap out recipe ingredients for healthier options.
Students were congratulated by teaching staff and project collaborators, and were awarded with a copy of the publication.
The project aims to promote healthier eating habits within the school, and each recipe is designed to minimise waste and focus on nutrition.
The cookbook features information on nutrition, a guide to healthy eating, and a breakdown of Australian food label information.
General recipe substitutions are suggested, such as replacing pasta with zucchini noodles, along with healthy lunch box item replacement ideas.
The Nourish and Thrive Cookbook is available to buy now at Echuca College’s administration office for $5 until limited copies sell out.
